The seasonality of food is determined by both the time of year and the geographical location of the place where it is produced. Each cycle, season, is different. Not every summer has the same rain or the same temperature as the previous year, nor does the moon always stay in the same place. Agriculture that respects the rhythm of the earth is very clear about what is best for each time of year. Therefore, the healthiest foods for us and most in harmony with the environment are those of each time of year: seasonal foods are also the tastiest. We are at the mercy of climate change and of nature’s droughts or rains, and that is why we are advocates of sustainability, to try to mitigate this global warming and the lack of water. Therefore, sometimes we cannot have everything we would like, since it is the earth that provides it for us, and it is not always possible. However, in Catalonia we are lucky enough to be able to fill our pantry with organic, local and seasonal products straight from nearby agriculture, and at BioBrots we have them so that our customers can enjoy them.
